From the winemakers Sarah & Iwo (Si), Pekoe, originating from the same vineyard as Sophie, stems from their strong belief in the vineyard's potential to yield exceptional Pinot Noir. Hand-harvested and meticulously destemmed, with a small portion of whole bunches retained, the grapes undergo a two-week fermentation period. Subsequently, the wine matures in French oak barrels, allowing it to develop its unique character and express the distinct qualities of the vineyard. A light but complex Pinot Noir!
