From the winemakers Sarah & Iwo (Si), Ada represents a single vineyard expression of 100% Chardonnay, specifically the Gin Gin clone. The grapes are meticulously hand-harvested and undergo whole bunch pressing before embarking on a wild fermentation journey. Following this, both malolactic fermentation and maturation take place in 500L French oak barrels. This meticulous process ensures the development of Ada's unique character, reflecting the terroir and the distinctive qualities of the Gin Gin clone.

A surprisingly intense yet light Chardonnay, with lively acidity balancing citrus and fruit flavours. It ends with a gentle nutty finish from the oak, without the usual buttery taste you might expect from a Chardonnay.
